Jerky Chili

Ingredients:

  • 2 tablespoons Olive oil
  • 1 medium yellow onion, diced
  • 1 teaspoon Ground cumin
  • 1 teaspoon Dried oregano
  • 1 teaspoon Paprika
  • 1/2 teaspoon Ground black pepper
  • 1 seeded jalapeño, minced (for a milder chili, use less or omit)
  • 1 lb beef jerky (cut into 1-inch pieces if needed)
  • 1 (14 oz) can Chili beans (drained and rinsed if preferred)
  • 1 (28 oz) can Low sodium crushed tomatoes
  • 1 (16 oz) bottle V8 juice

Directions:

  1. Sauté the Aromatics:
    • Heat olive oil in a large saucepan or Dutch oven over medium-high heat.
    • Add the diced onion, cumin, oregano, paprika, black pepper, and minced jalapeño. Stir frequently and sauté for 5 minutes, or until the onion becomes soft and translucent.
  2. Prepare the Jerky:
    • While the onions are cooking, chop the beef jerky into small pieces (about 1-inch).
    • Place the jerky in a food processor and pulse it several times until it is finely chopped but not pureed.
  3. Combine and Simmer:
    • Add the chopped jerky to the saucepan with the onions and spices. Stir everything together and sauté for an additional 3 minutes to allow the jerky to absorb the flavors.
    • Add the chili beans, crushed tomatoes, and V8 juice into the pan. Stir everything to combine and bring the mixture to a simmer.
  4. Simmer the Chili:
    • Once the chili is simmering, reduce the heat to low and cover the pan. Let it simmer gently for about 15 minutes, stirring occasionally, to allow the jerky to soften and the flavors to meld together.
  5. Final Adjustments:
    • Taste the chili and adjust seasoning if necessary. If you want a spicier kick, you can add more minced jalapeño or some chili powder.
    • If the chili is too thick, feel free to add a little more V8 juice or water to reach your desired consistency.
  6. Serve:
    • Serve the Jerky Chili hot, garnished with your favorite toppings like shredded cheese, sour cream, or chopped green onions.

Tips:

  • You can make this chili ahead of time; the flavors get even better after a day in the fridge.
  • For added richness, stir in some shredded cheese or top with crushed tortilla chips.
