Grilled Venison Filet & Portobello Mushrooms
Ingredients:
- 4 6 oz Venison filets
- 2 tablespoons Wild Game Seasoning & Rub
- 1 tablespoon Olive oil, divided
- 2 whole Portobello mushrooms, stemmed and sliced
- 1 tablespoon Balsamic vinegar
- 1 teaspoon salt
- 1 teaspoon freshly ground black pepper
Directions:
- Prepare the Venison:
- Pat the venison filets dry with paper towels.
- Rub both sides of the filets with wild game seasoning and olive oil.
- Cover and refrigerate for at least 4 hours, or overnight if possible, to marinate and let the flavors develop.
- Prepare the Mushrooms:
- Remove the stems from the Portobello mushrooms and slice them into thick pieces.
- In a bowl, mix together the balsamic vinegar, salt, pepper, and remaining olive oil.
- Toss the mushroom slices in the marinade, ensuring they are evenly coated.
- Place the mushrooms in a plastic bag or covered container and refrigerate for at least 4 hours to marinate.
- Preheat the Grill:
- Preheat your grill to medium-high heat. Make sure the grill grates are clean and lightly oiled to prevent sticking.
- Grill the Venison:
- Remove the marinated venison filets from the refrigerator.
- Grill the venison filets for 4 minutes per side, or until they reach your desired level of doneness (use a meat thermometer for accuracy: 130°F for medium-rare).
- Once cooked, remove the filets from the grill and let them rest for 5 minutes.
- Grill the Mushrooms:
- While the venison is resting, place the marinated Portobello mushrooms on the grill.
- Grill the mushrooms for 2 minutes on each side, until tender and slightly charred.
- Assemble the Dish:
- Slice the grilled venison filets into thinner strips (optional).
- Arrange the grilled Portobello mushrooms on top of the venison filets for a deliciously earthy topping.
- Serve and Enjoy:
- Serve the grilled venison and mushrooms with your favorite sides like roasted vegetables, mashed potatoes, or a fresh salad.
