Chipotle Ketchup
Ingredients:
- 1 tablespoon olive oil
- 1 yellow onion, chopped
- 3 cups tomato sauce (or canned whole tomatoes with their juices)
- 1 cup distilled white vinegar
- 1/2 cup honey or brown sugar
- 1 teaspoon dry mustard
- 1 teaspoon ground cinnamon
- Pinch of ground cloves
- Salt, to taste
- 2 celery stalks (with leaves), cut into 8 pieces
- 3-4 tablespoons chipotle hot sauce
Directions:
1. Sauté the Onion:
- Heat olive oil in a medium saucepan over medium heat.
- Add the chopped onion and cook until soft and lightly browned, about 5 minutes.
2. Build the Base:
- Stir in the tomato sauce, vinegar, honey (or brown sugar), dry mustard, cinnamon, cloves, and salt.
- Add the celery pieces and chipotle hot sauce.
3. Simmer the Sauce:
- Bring the mixture to a gentle boil over medium heat.
- Reduce the heat to low and simmer for 30 minutes, stirring occasionally.
4. Blend for a Smooth Texture:
- Remove from heat and discard the celery pieces.
- Carefully blend the mixture in a blender or food processor until smooth.
- Return the sauce to the stovetop and simmer for a few more minutes until it thickens to your desired consistency.
5. Store & Serve:
- Let cool, then transfer to an airtight container or jar.
- Store in the refrigerator for up to 2 weeks.
Serving Suggestions:
- Use as a dipping sauce for fries or onion rings.
- Brush over grilled meats for a smoky, spicy glaze.
- Slather on burgers, sandwiches, or tacos for a bold kick.
Yields: Approximately 3 cups of Chipotle Ketchup.
