Chipotle Ketchup

Ingredients:

  • 1 tablespoon olive oil
  • 1 yellow onion, chopped
  • 3 cups tomato sauce (or canned whole tomatoes with their juices)
  • 1 cup distilled white vinegar
  • 1/2 cup honey or brown sugar
  • 1 teaspoon dry mustard
  • 1 teaspoon ground cinnamon
  • Pinch of ground cloves
  • Salt, to taste
  • 2 celery stalks (with leaves), cut into 8 pieces
  • 3-4 tablespoons chipotle hot sauce

Directions:

1. Sauté the Onion:

  • Heat olive oil in a medium saucepan over medium heat.
  • Add the chopped onion and cook until soft and lightly browned, about 5 minutes.

2. Build the Base:

  • Stir in the tomato sauce, vinegar, honey (or brown sugar), dry mustard, cinnamon, cloves, and salt.
  • Add the celery pieces and chipotle hot sauce.

3. Simmer the Sauce:

  • Bring the mixture to a gentle boil over medium heat.
  • Reduce the heat to low and simmer for 30 minutes, stirring occasionally.

4. Blend for a Smooth Texture:

  • Remove from heat and discard the celery pieces.
  • Carefully blend the mixture in a blender or food processor until smooth.
  • Return the sauce to the stovetop and simmer for a few more minutes until it thickens to your desired consistency.

5. Store & Serve:

  • Let cool, then transfer to an airtight container or jar.
  • Store in the refrigerator for up to 2 weeks.

Serving Suggestions:

  • Use as a dipping sauce for fries or onion rings.
  • Brush over grilled meats for a smoky, spicy glaze.
  • Slather on burgers, sandwiches, or tacos for a bold kick.

Yields: Approximately 3 cups of Chipotle Ketchup.
