Venison Stroganoff
Ingredients:
- 1 ½ lbs venison (cut into thin strips)
- ½ tsp salt
- ¼ tsp black pepper
- ¼ cup minced onion
- 1 cup sliced fresh mushrooms
- 3-5 tbsp butter
- 2 tbsp flour
- 2 cups beef broth
- 3-4 tbsp sherry wine
- 2 tbsp tomato paste
- 1 tsp dry mustard
- ⅔ cup sour cream
- Cooked noodles, rice, or potatoes (for serving)
Directions:
1. Prep the Venison:
- Season venison strips with salt and black pepper.
- Cover and refrigerate for at least 2 hours to allow flavors to develop.
2. Sauté the Onions & Mushrooms:
- In a large skillet over medium heat, melt 2 tbsp butter.
- Add onions and mushrooms, cooking until soft and tender (about 5 minutes).
- Remove from the skillet and set aside.
3. Brown the Venison:
- In the same skillet, melt another 1-2 tbsp butter if needed.
- Add venison strips and cook just until browned (about 2-3 minutes per side).
- Remove the meat and set aside with the mushrooms and onions.
4. Make the Sauce:
- In the same skillet, melt 1 tbsp butter, then stir in flour to create a roux.
- Gradually whisk in beef broth, stirring constantly to prevent lumps.
- Add sherry wine, tomato paste, and dry mustard, stirring until smooth.
5. Simmer Everything Together:
- Return the venison, onions, and mushrooms to the skillet.
- Reduce heat to low and let simmer for 20-30 minutes, allowing flavors to blend.
6. Finish with Sour Cream & Serve:
- Just before serving, stir in sour cream and heat gently until bubbly (do not boil).
- Serve hot over cooked noodles, rice, or potatoes.
