Venison Stir Fry

Ingredients:

  • 1 red bell pepper (sliced)
  • 1 yellow bell pepper (sliced)
  • 1 green bell pepper (sliced)
  • 1 medium onion (sliced)
  • 1 zucchini (julienned or sliced)
  • 1 cup mushrooms (sliced)
  • 1 cup snow peas
  • 1 lb venison steak or backstrap (sliced into thin strips)
  • 2 tbsp olive oil or sesame oil
  • 2 tbsp soy sauce (plus more to taste)
  • 1 tsp garlic (minced)
  • 1 tsp fresh ginger (grated)
  • ½ tsp black pepper
  • ½ tsp red pepper flakes (optional, for heat)
  • 1 tbsp cornstarch (optional, for thickening)
  • Cooked rice or noodles (for serving)

Directions:

1. Prep the Ingredients:

  • Slice the bell peppers, onion, zucchini, and mushrooms into thin strips.
  • Trim and slice the venison into thin strips, about ¼-inch thick, for quick cooking.
  • If using cornstarch, toss the venison strips in cornstarch for a slightly crispier texture when cooked.

2. Sauté the Vegetables:

  • Heat 1 tbsp of oil in a large wok or skillet over medium-high heat.
  • Add the bell peppers, onion, zucchini, mushrooms, and snow peas.
  • Stir-fry for about 4-5 minutes, stirring frequently, until they start to soften but remain crisp.
  • Remove the veggies from the wok and set aside.

3. Cook the Venison:

  • In the same pan, add the remaining 1 tbsp oil.
  • Add garlic, ginger, and venison strips, cooking for 2-3 minutes, stirring frequently.
  • Cook until the venison is just medium-rare to medium—do not overcook, as venison is lean and can become tough.

4. Combine & Finish:

  • Return the cooked vegetables to the wok with the venison.
  • Drizzle soy sauce over the mixture and toss everything together.
  • Cook for 1 more minute to blend flavors.

5. Serve & Enjoy:

  • Serve hot over cooked rice or noodles.
  • Garnish with sesame seeds, chopped green onions, or a squeeze of fresh lime juice, if desired.
